Ingredients for Paneer Pre-preparation:

  1. 200g Paneer
  2. 1/2 tsp Chilly Powder
  3. 1/4 tsp Turmeric Powder
  4. 1/4 tsp Garam Masala
  5. Salt as required
  6. 1/2 tsp Ginger Garlic Paste
  7. 1 tsp Ghee

Ingredients for Paneer Masala:

  1. 1 tsp Ghee
  2. 2 tbsp Oil
  3. 1 Bay leaf
  4. 2 Cardamom
  5. 2 Cloves
  6. 1 Cinnamon
  7. 1/2 tsp Cumin Seeds
  8. 2 Onion [finely chopped]
  9. 1 tsp Ginger Garlic Paste
  10. 1.5 tsp Coriander Powder
  11. 1/4 tsp Turmeric Powder
  12. 1/2 tsp Chilly Powder
  13. 1/2 tsp Cumin Powder
  14. 1/4 tsp Pepper Powder
  15. 2 Tomato [as paste]
  16. 3 tbsp Curd [whisked]
  17. 1 cup Water
  18. Salt [for gravy]
  19. 1/2 tsp Garam Masala
  20. 1 tbsp Kasuri Methi

Step 1 – Paneer Pre-Preparation:

Take 200g of paneer in a bowl and add 1/2 tsp of chilly powder along with 1/4 tsp of turmeric powder. Put 1/4 tsp of garam masala and the required salt as per your preferred taste.

Add 1/2 tsp of ginger garlic paste and mix it gently. Let it rest for 15 minutes. Heat the pan with medium heat and add 1 tsp of ghee into it. Add the marinated paneer and fry it for 5 minutes.

Step 2 – Making Paneer Masala:

Take a pan and heat it with medium heat. Add 1 tsp of ghee, 2 tbsp of oil, one bay leaf, two cardamoms, and two cloves into it.

Add one cinnamon, 1/2 tsp of cumin seeds, and fry till it turns aromatic. Add two finely chopped onions and saute it for 2-3 minutes.

Add 1 tsp of ginger garlic paste, and fry it till the raw smell disappears. Put 1.5 tsp of coriander powder, 1/4 tsp of turmeric powder, and 1/2 tsp of chilly powder.

Additionally, add 1/2 tsp of cumin powder, 1/4 tsp of pepper powder, and mix it for a minute. Add two tomatoes as paste and cook it until the raw smell disappears.

Pour 3 tbsp of whisked curd into it. Mix it well and cook till oil separates. Pour 1 cup of water and add the required salt needed for gravy. Mix it and let it boil.

Add the fried paneer. Cover it with the lid and simmer it for 10 minutes. Finally, add 1/2 tsp of garam masala and 1 tbsp of kasthuri methi into it. Mix it and turn off the flame. Now, the Paneer Masala is ready!

Ingredients for Chicken Pre-preparation:

  1. 300g Boneless Chicken
  2. 1 tsp Ginger Garlic Paste

  6. 1/4 tsp Turmeric Powder
  7. 2 tsp Corn Flour
  8. Salt as needed

Ingredients for Chicken Fried Rice:

  1. 2 tbsp Oil
  2. 5 to 6 Garlic [finely chopped]
  3. 1/2 Onion [sliced]
  4. 1/4 cup Beans
  5. 1/4 cup Carrot
  6. 1/4 cup Cabbage
  7. 1/4 cup Capsicum
  8. 1/4 tsp Garam Masala
  9. 1/2 tsp Chilly Powder
  10. 2 Egg
  11. 1 cup cooked Basmati Rice
  12. 1 tsp Pepper Powder
  13. 2 tsp Soya Sauce
  14. Coriander leaves [few]
  15. Salt as needed

Step 1 – Chicken Pre-preparation:

Take 300g of boneless washed chicken and add 1 tsp of ginger garlic paste with 1.5 tsp of chilly powder. Add 1/2 tsp of coriander powder and 1/4 tsp of garam masala to it.

Put 1/4 tsp of turmeric powder, 2 tsp of cornflour, and the required salt. Mix it well. Let it rest for 20 minutes. Keep the flame at medium heat. Drop the chicken pieces in hot oil and fry them well. Keep this fried chicken aside.

Step 2 – Making Chicken Fried Rice:

Pour 2 tbsp of oil into the pan and keep the flame at medium-high heat. Add 5 to 6 finely chopped garlic and fry it until the raw smell disappears. Add 1/2 sliced onion and cook for a minute. Add 1 cup of beans, carrot, cabbage, and capsicum each.

Add required salt for veggies and cook for 2 to 3 minutes. Put 1/4 tsp of garam masala, 1/2 tsp of chilly powder, and mix it well.

Add two eggs along with the required salt for it and mix it well. Get ready with basmati rice cooked and cooled before this step, and don’t add it right immediately after cooking. It’s time to add cold and cooked basmati rice of 1 cup into it. Add the fried chicken made earlier.

Add 1 tsp of pepper powder, 2 tsp of soya sauce, some coriander leaves, and mix it well. Add salt if needed. Chicken Fried Rice is ready!

Step 1 – Making Buttercream:

Get 200g of butter at room temperature in a bowl. Beat it well until color changes, and add 1 cup of powdered sugar in batches. Sift it well before adding the sugar. Beat it well until stiff peaks.

Turn the bowl upside down, and the cream shall not fall. Add 1 tsp of vanilla essence, and optionally pour 2 tbsp of milk into it. Beat it again, and Buttercream is ready. You also make chocolate cream by adding cocoa powder to it.

Ingredients:

  1. 2 Egg
  2. 1 tsp Vanilla Essence
  3. 2/3 cup Sugar

  7. 1/2 tsp Baking Soda
  8. A pinch of salt
  9. 1/4 cup Milk
  10. Few Cherry/Tutti frutti [optional]

Step 1 – Making Cake Batter:

Add two eggs in a bowl along with 1 tsp of vanilla essence and beat it well. Take 2/3 cup of sugar and add it in batches while whisking it. Whisk until it gets a frothy consistency.

Pour 1/2 cup of refined oil and mix it well. Put 1 cup of all-purpose flour/maida, 1 tsp of baking powder, and 1/2 tsp of baking soda in a sleeve.

Add a pinch of salt on top of it and sift it well. Mix it gently. Take 1/4 cup of milk, and add milk gradually to get a smooth batter consistency. Optionally, you can use cherry or tutti fruity in it and mix it. The Cake Batter is ready.

Take three small steel bowls. Brush it with oil. Dust some flour over it and swirl the bowl to coat from all the sides. Fill the batter partially and tap it to avoid air bubbles. Then top it up with cherry or tutti frutti. You can use either glass cups or steel tumblers. Make sure the glass cup is heat resistant if you use it. You can get 6-7 cupcakes for this measurement. It’s ready for the following process.

Step 2 – Making Cupcake:

Take a vessel and place a stand or plate upside down. Cover it with a lid and preheat it for 5 minutes at medium heat. Place a plate over it. Place the steel bowls over the plate. Cover it again and cook for 25-35 minutes at low heat. Check the cake with a knife or toothpick. The cupcake is ready! Let it cool down. It’s ready to serve!

Step 1 – Making Masala Pori [Spicy puffed Rice]:

The process is straightforward to make it. All you have to do is mix it, and no need to cook. Take a vessel and add 1.5 cups of puffed rice. Put 1/4 cup of peanuts, 1 tbsp of the roasted gram, one finely chopped onion, 1/2 finely chopped deseeded tomatoes, and 4 tbsp of grated carrot.

On top of it, add few chopped coriander leaves, 1/2 tsp of chilly powder, a pinch of garam masala, 1/2 tsp of salt, and 1 tsp of lemon juice. Mix it well and serve it immediately right after mixing to have a better outcome in taste. Stree-style spicy puffed rice, otherwise called masala pori, is ready for serving!

  1. 1 kg Mutton

  6. Mint leaves [few]

Ingredients for Masala Paste:

  1. Mint leaves [1 handful]
  2. Coriander leaves [1 handful]
  3. 2 Green Chilly
  4. 1 piece Ginger
  5. 10-12 Garlic cloves
  6. 3 cups Seeraga Samba Rice

Ingredients for Mutton Biryani:

  1. 4 tbsp Oil
  2. 2 tbsp Ghee
  3. 2 Cinnamon
  4. 1 Star Anise
  5. 2 Cardamom
  6. 2 Cloves
  7. 1 Bay leaf
  8. 3 sliced Onion
  9. Salt as required
  10. 1.5 tsp Chilly Powder
  11. 3 tsp Garam Masala
  12. 3 finely chopped Tomato
  13. 4 cups Water
  14. Juice of 1 lemon
  15. 1 tsp Ghee

Step 1 – Mutton Marination:

Let’s start with marinating the mutton. All you’ve to do is take 1kg of mutton in a bowl and add the following ingredients. Add 1 tbsp of ginger garlic paste, 1/4 tsp of turmeric powder, 1 tsp of chilly powder, 1/2 cup of curd, some mint leaves, and mix it well. Marinate it for 2 hours or at least 30 minutes.

Step 2 – Making Mutton Paste:

Take a mixie jar. Add one handful of mint leaves, one handful of coriander leaves, two green chilly, one piece of sliced ginger, 10 to 20 garlic cloves, and blend them to make a fine masala paste. Keep this stuff aside.

Take 3 cups of seerasamba rice in another bowl. Wash and soak it in water for 30 minutes.

Step 3 – Preparing Mutton Biryani:

Pour 4 tbsp of oil into a pressure cooker and put 2 tbsp of ghee in it. Keep the flame at medium heat. Add two cinnamon, one star anise, and two cardamoms into it.

Then add two cloves, one bay leaf, and fry till it turns aromatic. Put three sliced onions, required salt, and saute well until it gets golden brown color.

Pour the ground masala paste, and cook till the raw smell disappears. Add 1.5 tsp of chilly powder, 3 tsp of garam masala, and cook for a minute. Let’s add three finely chopped tomatoes and saute well until it turns soft and mushy.

It’s time to show the marinated mutton in the picture. Add it along with the required salt, and mix it well for 2-3 minutes. Pour 1 cup of water, cover the cooker with weight and cook for 5-6 whistles. Check whether the mutton is well cooked.

Add the soaked rice and mix it gently. Add 1.5 cups of water for 1 cup of rice. As we added 1 cup of water for mutton already, add 3 cups of water and juice of one lemon. Put the required salt for rice this time. Cover it with a lid and cook for 10 minutes with medium heat. Stir it occasionally to avoid burning. Mix it right after 10 minutes.

You are at the end of this process. Spread 1 tsp of ghee over the rice, cover it again, and simmer for 20 minutes. Place the preheated tawa on top of it. Put some hot water over it. Let it rest for another 30 minutes. Seeraga Samba Mutton Biryani is ready. Serve it with Raitha and Brinjal gravy!

  6. 1.5 cups Milk [360-375 ml]
  7. 1/2 tsp Cardamom Powder
  8. 4 tbsp Sugar

Step 1 – Making Batter:

Take ten slices of bread with the edge removed, break them into pieces and blend them to get bread crumbs. Beat two eggs well in a bowl.

Add 1/2 cup of powdered sugar, 1 tsp of vanilla essence, 2 tbsp of melted butter, and mix it well until sugar dissolves. Pour 360 to 375ml of milk into it. Add 1/2 tsp of cardamom powder, and mix it well. Add the bread crumbs and mix them. Keep this stuff aside for 10 minutes.

Step 2 – Making Caramel:

Add 4 tbsp of sugar to a pan. Turn the flame on with medium heat. Heat until it gets light brown color. Take care that it does not burn to avoid a bitter taste in the caramel outcome. Transfer it immediately to the mould. Spread it evenly and pour the prepared batter over it. Cover it with aluminum foil. Prick the aluminum foil with a knife. Now, it’s ready for the following process.

Step 3 – Making Bread Pudding:

Boil water in a vessel. Put a stand in between and Place the mould over it. Steam it for 40-45 minutes at low heat. Check it with a knife by pricking the pudding, and the knife comes out clean. The Bread Pudding is ready to serve!

Veg Biriyani using Pressure Cooker

This week I tried making Veg Biriyani. I make it with a pressure cooker. And the recipe needs basmati rice, mixed veggies, and spices. It is easy to make once you have all the veggies ready. Let’s get started!

Ingredients:

  1. 2 tbsp Oil
  2. 1 tbsp Ghee
  3. 1 Cinnamon
  4. 2 Cloves
  5. 2 Cardamom
  6. 1 Star Anise
  7. 1 Bay leaf
  8. 2 medium sliced Onion
  9. 1 Green Chilly
  10. Mint leaves [few]
  11. Coriander leaves [few]
  12. 1 tbsp Ginger Garlic Paste
  13. 1/4 tsp Turmeric Powder
  14. 1/2 tsp Chilly Powder
  15. 1 tsp Coriander Powder
  16. 3/4 tsp Garam Masala
  17. 1 finely chopped Tomato
  18. 1/2 cup chopped Carrot
  19. 1/2 cup chopped Beans
  20. 1/2 cup chopped Potato
  21. 1 cup Peas
  22. Salt
  23. 4 tbsp Curd
  24. 1 cup Basmati Rice [Soaked for 30 minutes]
  25. 1.5 cups Water
  26. Juice of half lemon

Step 1 – Making Veg Biriyani:

Take a pressure cooker and add 2 tbsp of oil into it. Keep the flame at medium heat. Pour 1 tbsp of ghee into it and add one cinnamon, two cloves, two cardamoms, one piece of star anise, and one bay leaf. Saute for a minute.

Add two medium-sized and sliced onions into it. Put one green chilly and fry it for 2 minutes. Add few mint leaves and coriander leaves and mix it well.

Let’s add 1 tbsp of ginger garlic paste and fry it until the raw smell disappears. Put 1/4 tsp of turmeric powder, 1/2 tsp of chilly powder, 1 tsp of coriander powder, 3/4 tsp of garam masala, and mix it for a minute. Get one finely chopped tomato and add to the mixture. Cook it for 2-3 minutes.

Put 1/2 cup of chopped carrot, 1/2 cup of chopped beans, 1/2 cup of diced potato, 1 cup of peas, and mix it well. Add some required salt for the vegetables. Pour 4 tbsp of curd and mix it well. Let it cook for 3 minutes.

Add 1 cup of soaked basmati rice and mix it for a minute. Soak the rice for 30 minutes. Pour one and a half cups of water into it with the required salt. Squeeze the half lemon to extract the juice into the mixture. Mix it well. Cover with placed weight and cook it for two whistles at medium heat. Let it rest for 20 minutes. Tasty Veg Biriyani is ready! Serve it with Onion raitha.

  1. 12 Sliced Breads
  2. 1 tbsp Oil
  3. 4 medium finely chopped Onion
  4. 1/4 tsp Turmeric Powder
  5. 1/2 tsp Chilly Powder
  6. 1 tsp Garam Masala
  7. 1/2 tsp Cumin Powder
  8. 2 medium-sized Potato
  9. Some Coriander leaves
  10. Salt as needed
  11. Lemon Juice [few drops]

Step 1 – Making Masala:

Take a pan and preheat with 1 tbsp of oil with medium heat. Add four medium-sized finely chopped onions, and saute it for 2-3 minutes until translucent.

Add 1/4 tsp of turmeric powder, 1/2 tsp of chilly powder, 1 tsp of garam masala, 1/2 tsp of cumin powder, and fry it for a minute.

Boil two potatoes and mash them well. Add those potatoes into the pan. Put some coriander leaves, required salt, and few drops of lemon juice. Mix it well and turn off the flame. The stuffing is ready to use in the later process.

Step 2 – Making Grilled Sandwich:

Preheat the sandwich maker for 4-5 minutes. You can use a grill pan or tawa to make this sandwich. Put some stuffing over the bread. Spread it evenly and seal it with another bread. Press it gently and apply butter on one side. Place the bread over the preheated sandwich maker and apply butter on the other side too. Repeat the same for rest of the breads. Close the sandwich maker and cook for 5 minutes until the bread gets golden brown. Now, the grilled sandwich is ready!
